The Amazing Rice Salad
Hey guys
This is a photo of my new Amazing Rice Salad which is named after my client Terry. He is now participating in a race on a reality show on CBS. He loves the salad. He even told me that whilst he was climbing the Great Wall of China, which incidentally he completed in just 10 mins, he was thinking of my food.
The salad itself is very simple to prepare. It is high in vitamins with a low glycemic index so is suitable for individuals with diabetes. If you would like the recipe, drop me an email or call me.

Grilling for Living — The South Hampton Diet
Hey guys
How does a nice piece of grilled chicken breast and some healthy hamburgers sound? Simply delicious. Well, these are not the only things you can grill. Asparagus, portobello mushrooms, tomatoes and onions all grill nicely too. You can also grill some pineapple or peaches, or even strawberries, for dessert.
There are many ways you can turn your grilling not only into a flavourful and fun way to cook but also into a healthy way to eat. By choosing foods that are low in fat and high in nutrients and full of flavor, you can create great meals that are also healthy.
Marinating not only adds extra flavor to foods but also reduces the formation of cancer causing substances on them. For example, a marinade containing olive oil and/or citrus juices can reduce the formation of these chemicals by as much as 99%. So, not only do they tenderize the meats, they make a much better meal.
Here are some healthy tips you can follow:
- Keep your grill clean. A clean grill not only cooks better, it is safer in every way.
- Trim excess fats from food. These fats are the troublemakers, so keep them to a minimum.
- Use marinades based on olive oils and/or citrus juices. This is the number one way to stay safe.
- Avoid flare-ups. Flare-ups burn foods and this increases HCA (heterocyclic amines) formation.
- Don’t overcook foods. The charred bits on foods are the largest sources of PAHs (polycyclic aromatic hydrocarbons) and HCAs so if you have charred sections of meat, cut them off.
Even though summer is now officially over, you can still reap the benefits of grilled foods. Give it a try!

Reality Checked!
Hey guys
I'm really excited to share that my client Terry will be appearing on a major network's reality programming this evening. Its going to be a wonderful adventure for him, traveling over 40,000 miles in under 30 days.
Prior to undertaking this trip, Terry trained with me for 3 weeks to build up his stamina, endurance and strength. I also prepared a nutrition plan for him to lean up and gain muscle while increasing his energy levels. I must say that he made great progress in those few weeks.

Transformation Spotlight: Update
Hey guys
Back in Spring I introduced you to my client Erik. At that time, he had dropped 48 lbs in 14 weeks and I had shown you his progress photo. Well, I've got an update on him that I want to share with you. Take a look...
Since then, he's lost another 22 lbs for a grand total of 70 lbs! AND his body fat is now measuring only 7%! To clearly see how much progress we have made, I'm showing you another before shot we had taken. Isn't his transformation simply inspiring?
Erik, thanks for persevering with our training and your nutrition. You have made such great progress and I'm really proud to have been a part of it. Not only is your energy level way up but you have increased your stamina and strength.
We are now ready for the next level!

Sunny Orange Salad
Hey guys
I just returned from my vacation in South Hampton. And I brought back a lot of new recipes. Here is one — Sunny Orange Salad. Doesn’t it look awesome? Not only does it taste good but it is also very easy to prepare.
Recipe
2 oranges
1 medium red onion, sliced into paper-thin rings
8 large fresh basil leaves, shredded (you can also use dry basil leaves)
3 tablespoons extra-virgin olive oil
2 leaves of chives for presentation
Freshly ground black pepper
Peel the oranges and remove all the pith. Arrange the slices on a large, shallow platter. Lay the onion slices on top of the oranges and sprinkle with the basil. Drizzle the olive oil over the salad and season generously with black pepper. Cover and let it stand at room temperature for at least 2 hours for the flavors to come out before serving.
